Director of Menu Innovation
As Director of Innovation you will report directly to the Chief Marketing Officer and be responsible for delivering best in class food and beverage offerings (alcohol and non-alcoholic), systems, food safety and service by overseeing all aspects of kitchen operations system-wide. In addition, you will be working collaboratively with operating and marketing teams and will be expected to provide culinary leadership to company operators.
ESSENTIAL DUTIES AND RESPONSIBILITIES
  • Direct high quality menu innovation.
  • Provide thought leadership on ingredients, products and kitchen systems.
  • Lead efforts to identify and prioritize product improvement and margin optimization.
  • Help develop strategies for group event planning and execution.
  • Develop, Implement and maintain food and beverage standards through sound systems.
  • Monitor guest satisfaction and speed of service.
  • Work collaboratively with operations and supply chain for vendor/sourcing/product specifications.
  • Provide direction and hands on training to kitchen managers and operations teams.
  • Implement new product rollouts throughout the system
  • Assist in developing equipment specifications
REQUIREMENTS
  • Bachelor's Degree in food science, culinary, or related degree
  • Minimum of 10 years experience with casual or fast casual multi-unit chain directly responsible for menu item development including R & D, product sourcing, field testing and rollouts, and measurement of success metrics
  • In-depth and thorough knowledge of emerging food trends and marketing concepts that can be adapted to fit emerging family entertainment concept
  • Proven experience leading innovative and strategic initiatives supporting "brand" and "product"
  • Proven results in menu design, food cost modeling including theoretical vs. actual, and product mix analysis
  • Working knowledge and hands on experience working closely with the correlation of guest metrics and consumer research
  • Experience working within a fast growth organization and managing through change and ambiguity
  • Experience managing, coaching, and developing direct reports with experience leading successful Directors/Managers is ideal
  • Demonstrated abilities in project management, taking ideas from concept to implementation
  • Ability to travel up to 20%
