The Chilton Club is regarded as premier benchmark for club dining. The priority at the Chilton Club is to provide high-end quality Food and Beverage offerings to a discerning, worldly and knowledgeable members and guests. You would be part of a small team in a friendly, creative, low stress working environment. Preparation and service of food for daily operations in accordance to menu specifications and Chilton Club standards maintaining all aspects of assigned stations.

PRIMARY RESPONSIBILITIES

  • Prepare menu items using various cooking methods and techniques including advanced knife skills
  • Have a comprehensive knowledge and ability to execute menu items from all stations and culinary functions in assigned outlet or kitchen area.
  • Manage assigned work stations maintaining production of menu items based on forecasted business levels and communication with culinary management. Execution of menu items meeting set quality and time goals without compromise. Ensure spoilage/waste are kept to a minimum by utilizing proper quantities and rotating products.
  • Communicate to culinary management operational issues, through verbal and non-verbal methods, including but not limited to station inventory, product quality, equipment issues and failures,
  • Ensure general sanitation, food safety protocols and allergen procedures in accordance with established Chilton Club standards and Boston Department of Public Health food service codes. Maintain a clean and well-organized area, included but not limited to, work station, reach-ins, walk-ins and storage areas.
  • Maintain thorough knowledge of menu items and recipes related to assigned station to ensure the ability to answer inquiries from internal and external guests relating to menu ingredient composition, preparation procedures and service capabilities.

SECONDARY RESPONSIBILITIES

  • Report to work station within scheduled time, in full uniform adhering to set grooming standard.
  • Creative and general operational input on menu development.
  • Fill requisitions for food and general sundries form storeroom, transport and store product for use in main kitchen.
  • As a lead culinary colleague, assist in monitoring reporting any defects of service, variances from standard and performance issues to culinary management
  • Maintain professional climate between culinary, wait staff and management
  • Ensure that all equipment is in good repair, is clean, and is operating to specifications.
  • Maintain safety standards throughout department

The Chilton Club is one of the finest private social Clubs in Boston, where formality and grace are the standard, and teamwork actually happens. The Chilton Club is located on Commonwealth Ave in the Back Bay area of Boston, the Clubhouse is a five-story, 45,000 square foot brick building including guest bedrooms and various spaces for dining and events including a Main Dining Room, and other private banquet facilities supported by 840 Members. The entire staff of about fifty and the Club's Board of Governors are committed a standing tradition of Service Excellence. The Club provides in-room Breakfast, al Carte Lunch and Dinner service, primarily Monday-Friday. Complementing the dining experience is a highly skilled service team with matching service culture. The Club also produces various themed events, particularly noted for its Lecture Series offering cuisine to match the theme. Additionally, the Club hosts private events of up to 200 guests

**Pay:** $18.00 - $20.00 per hour
