About the job
Le Veau d'Or has been serving classic French bistro cooking on East 60th Street since 1937. Reopened by Riad Nasr and Lee Hanson of The Frenchette Group, the restaurant honors that history with a menu built on timeless technique and careful sourcing. Our pastry program is rooted in the classics of the French dessert tradition, executed with precision every night. We're looking for motivated pastry students who want to learn French pastry the right way, in a kitchen that takes teaching seriously.
The Externship
Our structured 15-week (~600 hour) program gives pastry externs real responsibility in a working restaurant pastry kitchen. Externs train on entremets, plated desserts, and à-la-minute service, building the skills to both produce components during the day and execute desserts on the line during dinner service. Each extern works through a defined training plan with regular check-ins and feedback from our pastry and kitchen leadership.
What You'll Learn
- Classic French pastry technique: doughs, custards, creams, mousses, and sauces
- Entremet production, from components and assembly to finishing and glazing
- Plated dessert execution with consistency and attention to detail
- À-la-minute desserts finished to order during service
- Production planning, prep lists, and station organization
- Professional kitchen standards: scaling, labeling, sanitation, and storage
What We're Looking For
- Currently enrolled in an accredited culinary or pastry program with an externship requirement (CIA, ICE, and others welcome)
- Genuine interest in French pastry and classical technique
- Precision, cleanliness, and a strong sense of organization
- Strong work ethic, punctuality, and willingness to take direction
- Ability to work evenings, weekends, and holidays
- Able to stand for long periods and lift up to 50 lbs
- NYC Food Handler's certificate preferred
